A kiss to you


I am starting some holiday baking and usually make these little meringue kisses. I bag them in treat bags and they last a long time. Don't bake them on a humid day however or they won't form stiff peaks.They are wonderful with a hot cup of tea or hot chocolate.

This year I am trying to make more PINK food to give and I flavored these with rose flavoring. I think they come out yummy just use a star tip and get the meringue really still so you can make that little swirl tip on top! 
The pink glass compote is a recent EBay find.


Here is the simple recipe that makes a small enough batch:
Meringue Kisses
3 egg whites
1/4 teaspoon creme of tarter
3/4 cup fine sugar sometimes called bakers sugar or make it yourself in food processor with regular white sugar
pink (or any color) food coloring to the shade you like
flavoring of choice-- rose, almond, vanilla all work well about 1/4 teaspoon
Whip whites till frothy add creme of tarter
add sugar slowly then add rest of flavoring and color
Pipe on parchment or silpat on a baking sheet
bake at 325 for 3 hours turn oven off leave in oven overnight if you can and if it is not humid in house
Store in airtight container or treat bags

Pink macaron and pink kisses





I love the little bags of pink meringues from Laduree--I used to call those kisses not sure what the French call them. I love pink macaron and Laduree and Pierre Herme always have new flavors/parfumes to go with the change of seasons.
 The last photo is one I found on flickr just such a pretty color I wonder if those are rose flavor? I do like rose flavorings and often add rose to creme brulee or iced teas. Join in on Pink Saturday at:
