Making molded Easter candy--tutorial-- trial and lots of errors!

I wanted to try to make some molded chocolates to put in Easter baskets this year. I learned it is not as easy as I thought it would be. Of course, did I read any instructions first?

No, I prefer learn the hard way.

Finally, I relented and went to the cake decorating supply place -Cake Art in Tucker, Ga. and they gave me a handout and it went much better after that.

I used the white round flat on one side chocolate disks that cake supply places and Michael's sells. I tinted the chocolate PINK , bien sur, with a paste food coloring. You get much better color from a paste and I think it is easier to work with. I melted it in top a double boiler putting the chocolate over the boiling water after I removed the pan from the burner--this is much easier than leaving it on the boiling water on the burner.

Pouring the chocolate into the little molds -in two molds both sides-- remember these are fully formed not one sideded candies (I used a hard piece of plastic as a straight edge to scrape excess from top of molds. I let it set for a minute to cool a bit then put both sides of mold together quickly and held it in place with those clamp paper clips one on each side.

Popped them into the freezer (a very important step) for about 4 minutes and they pop out fairly easy after that. Any that break or don't look good can be thrown back into pot and melted and used again! I made so many I lost count before I got a few that looked good! That darn learning curve.

Next you trim around the edges to make it look neater( as I get better at getting them even this part may go away!) and I then melted a tiny bit of the chocolate in a little dish in the microwave and added a dot of it to the pre-made flowers I got at the cake supply and added them.

Final step- I put them in little plastic bags with some crinkle paper to look nice and help to cushion them--added a Lilly Pulitzer label on the back side to seal it and voila-- cute little Easter basket goodies.
